I like Tuscan Bean and Spinach soup:
2 quarts chicken broth
2 cans garbanzo beans
1 lb italian link sausage cooked and sliced
2 cans chopped spinach
heat and eat

Some of the Greek restaurants have spanakopita,
but mostly trucked-in from some Greek assembly plant.
If you make your own, you can put in more feta, and
spinach.
Yeah, that spinach salad sound good!
One show of "America's Test Kitchen"
they made wilted spinach salad, made
it about ten different ways to get the best
recipe.
But mostly, just fry a quarter pound of bacon,
reserve 2 tablespoons of fat. I like just plain
apple cider vinagre, heat the vinagre with the
2 tbsp of bacon fat and pour on hot. Toss and
crumble-in some bacon. I think the onions and
hard-boiled egg slices are optional. Also, you can
ad a few croutons!
